One school of thought is the wood wicks out the water from the thinset reducing the ability for it to wet cure resulting in a weaker bond.

If you have a piece of porcelain over Kerdi, the thinset is sandwiched between 2 fairly impermeable layers. Modified thinset can take a few days to dry under those conditions.
